The Challenge:
Create a modern NYC format that works in three modes:
a bagel café in the morning, a lunch spot with soups & salads, and a full bar with cocktails at night.
A 2,200 sq ft space with 55 seats in one of the most demanding districts in Manhattan.

I built the entire operation from the ground up:
Full concept development and day-part strategy
Menu creation for all three formats
