The Challenge:

Create a modern NYC format that works in three modes:
a bagel café in the morning, a lunch spot with soups & salads, and a full bar with cocktails at night.
A 2,200 sq ft space with 55 seats in one of the most demanding districts in Manhattan.

The Solution:

I built the entire operation from the ground up:

  • Full concept development and day-part strategy

  • Menu creation for all three formats

  • Contractor and construction supervision

  • Navigating NYC permits and compliance

  • Cost control, P&L systems, procurement

  • A clear scaling model for future locations

The Results:

The first Wall Street location is now launching as a flagship,
with a solid operational foundation designed for expansion across Manhattan and beyond.
